Cucumber spritz with lychee

If you want a fresh, bright drink to accompany you in a summer soiree, or when you sit by the pool, then this is the cocktail for you. A cucumber spritz is mellow and leans more towards crisp than sweet. Paired with a hint of lychee, you’ve got a well-rounded drink to sip on in the heat.

Ingredients

Cucumber lychee puree

Method

Step 1

To make the puree, place cucumber, lychee and syrup in a blender and blend until smooth.

Step 2

Add ice to a shaker, pour in vodka, lime juice and 30ml of the puree. Shake to combine.

Step 3

Pour into a glass, top with soda water. Garnish with cucumber ribbons and extra lychees.
