Step 1
Preheat oven to hot, 200°C. Line an oven tray with a sheet of baking paper.
Step 2
In a large bowl, combine breadcrumbs, parmesan, parsley and lemon zest. Season and mix well. Drizzle in enough olive oil to lightly bind.
Step 3
Arrange fish on tray. Press on crumb mixture evenly. Drizzle with a little more oil.
Step 4
Bake 10-15 minutes until the fish flakes easily when tested with a fork and the crumb is golden. Serve with salad and lemon wedges.
