Preheat oven to 180°C. Line a 12 hole 1⁄2-cup capacity muffin tin with paper cases or squares of baking paper. Sift flour and baking powder into a large bowl. Add salt. In a separate bowl, whisk sugar, eggs, buttermilk, oil and vanilla until smooth. Pour into flour mixture, mixing to combine.

Fold in your choice of flavour. Use 1 of the suggested combinations or invent your own variations. Spoon into muffin tin so each paper case is 3⁄4 full, adding garnish (if applicable to your flavour). Bake for 20 minutes or until just firm to touch. Cool on a wire rack, then serve.
