Method

1.

Preheat oven to 150°C. Line 4 oven trays with baking paper or try these silicone baking mats instead

Put flour in a large bowl and stir in oats and sugar.

3.

Combine butter, syrup and hot water in a small saucepan over a medium heat. Stir occasionally until butter has melted.

Stir bicarbonate of soda into syrup mixture and remove from heat.

5.

Add warm syrup mixture to oat mixture.

6.

Stir until well combined.

7.

Shape tablespoons of the mixture into 28 balls.

8.

Arrange balls on prepared trays about 8cm apart. 

9.

Press each ball lightly with your fingers to flatten slightly.

10.

Bake, in batches, for 18-20 minutes or until golden brown. Remove from oven and cool on trays. Serve.

What were in original Anzac biscuits?

These treats would often have to endure a lengthy journey (sometimes lasting several months), so it was important to select a recipe with ingredients that would not spoil easily.

Traditional Anzac biscuits were comprised of rolled oats, sugar, plain flour, coconut, butter, golden syrup or treacle, bi-carbonate of soda and boiling water. A recipe without eggs made the perfect candidate for the task – although they weren’t officially labelled Anzac biscuits until the 1920s.

Should Anzac biscuits be chewy or crisp?

Traditionally, Anzac biscuits were actually quite crisp and crunchy although this recipe gives you a deliciously chewy Anzac biscuit. 

For those who prefer their bickies crunchy, add another three minutes to the cooking time to get the desired crunch.

Why add baking soda to Anzac biscuits?

Baking soda is the secret ingredient that adds moisture to the biscuits without adding any extra grease.

What is a substitute for golden syrup in Anzac biscuits?

If you have honey, treacle or molasses in your pantry they all make good substitutions for golden syrup.
