Ingredients
125g good quality ghee, melted and cooled
1/2 tsp vanilla essence
250g plain flour
1 tsp bicarbonate soda
85g pure icing sugar
Pinch of salt
40g semolina
2-3 Tbsp milk or water
Finely chopped glacé cherries or natural almonds, halved, to decorate
Method

Preheat oven to 170°C/150°C fan-forced. Line 2 oven trays with baking paper. Combine ghee and vanilla essence in a small bowl.

Sift flour, bicarbonate of soda, icing sugar and salt in a large bowl. Stir in semolina.

Add melted ghee mixture to dry ingredients a little at a time, kneading well until a soft and non-sticky dough forms. If dough is crumbly, add 1 tablespoon of milk or water at a time, kneading after each addition.
